Sunday Dinner: February

Sunday, March 4, 2012 -
Oscar night. A fancy night. And the way I wanted to spend was just how I did - with my friends. Our February Sunday dinner ended up on the night of the fancy awards, and we had some great food while watching the event on tv.

A delicious, tender pork tenderloin had been waiting for us in the slow cooker. It was accompanied by sweet and russet roasted potatoes and also roasted broccoli. And, it follows the Paleo diet that Ral is doing for their CrossFit challenge.

Delicious. I like Sundays...

Smoked Chicken & Apple Pot Pies

Monday, February 20, 2012 -
One of my favorite Sunday to-do's is cooking with husband. Sometimes we spend the day prepping for the week. And by we, it is usually hubs. He'll bake bread for lunch sandwiches while I put away groceries. Not saying that I can't bake. But, my hubs is the baker of the family because he is good at it.

He is also a smoker. Not the gross, cancer type of smoking. The delicious, full of flavor type of smoking. And on Sunday's, it is a great day to smoke meat. He uses the grill, low temperature and all. He even stuffs the thing with burnage to give it the full, smokey flavor. A 'coal hole' if you will.

I really do mean to get him a smoker, but he makes do without it. Beautifully I might add. And I'm happy to say I reap the benefits of his beautiful leisurely smoking.

Sometimes I whip a simple coleslaw to go with it. But this time around, I was dehydrating apples while he was doing his thing. I had extra apples and decided to make us mini apple pies. Apple pot pies if you will. I had bought these adorable red snowflake ramekins from Crate & Barrel and decided this was the perfect time to use them.

We eat pretty good on Sunday's. Sunday fun-day that's for sure.

All I did to make these little apple pies was add some cinnamon and sugar to sliced apples. After putting them in the ramekins, I put the pie dough on top. This dough was made out of flour, salt, iced water, and butter all pulsed together in the glorious Cusinart food processor. Honestly, I love my fp. It is phenomenal.

A quick egg wash, a few slits in the dough and a sugar sprinkle before going into the over at 375 degrees was all it needed. Once the crust was browned, these delicious little guys were quite a sweet treat for us.

I love Sunday. No make-up on Sunday makes it that much better too. Just sayin'.

Sunday Morning Ritual with a Splash of Pesto

Friday, April 22, 2011 -
I like grocery shopping.  I know most people don't, but there is something that I genuinely enjoy about it.  I make our weekly menu on Sunday morning over a cup of coffee, pack up our reusable bags and then head to the store with hubs.  We always begin with veggie picking and then work our way to the meat and dairy.  It's a Sunday ritual I really enjoy - like brunch and reading the paper with my coffee.

I think we didn't go this past week because it was my birthDAY (opposed to week, weekend or month.)  Not that it is a reason to not go, but we were busy and just didn't make it.  When we don't go to the store, we are always left with two options during the week:

1.) Go to the store - just do the trip on Monday or Tuesday - during the week.
2.) Get creative with the pantry and fridge.

Sometimes option one is difficult with our schedules.  I'm a busy lady, I know this, and sometimes it is a battle to get everything into the week.  But option two can be difficult as well because we don't stock up on items in the pantry.  We like to buy a lot of things fresh, so we don't freeze a lot either.  We don't have frozen pizza on hand and we don't really do boxed meals.

But this week, we decided on option 2 - let's make it work.  We had some fresh veggies from our second week of CSA so that dramatically makes it easier.  With a little inspiration from Jessica over at The Novice Chef, I decided to use the spinach and make a pesto of my own.  I had never used spinach in a pesto, and without basil, I knew it would be interesting (our basil seeds are not giving us any love quite yet, but they will! Hubs has a green thumb for sure.)

I pulled out my mini chopper (I'm in desperate need of a full-sized food processor.  If anyone would like to contribute, I'm taking donations) and began by pulsing some spinach.  I added maybe a cup of leftover ricotta cheese, about 4 cloves of garlic, a few handfuls of Parmesan cheese and seasoned it with salt and pepper.

I added it to the cooked macaroni noodles we had on hand and tossed with about a cup of raw spinach leaves.  A little dusting of grated Parmesan on top, served with a simple red and green leaf lettuce salad.

So, veggie box update:
  • Spinach
  • Red and Green leaf lettuce
  • Mache (which we used last week to make fish tacos)
  • Wild chives
  • Green onions
  • Kale
Unfortunately, our mache is looking a little gloom.  But I do plan on using it before it all goes down hill.  I'll sneak the wild chives and onions in somewhere, and the kale, we'll figure it out sometime.  Time just seems to not be on my side this week...

Happy Earth Day!

Weekend Brunch at Home = Happiness

Friday, February 11, 2011 -
Sunday's are Tim's favorite days.  He gets to wake up late and relax over coffee and the newspaper.  During football season, we watch the Packers in the afternoon..  It is also the day for grocery shopping.  But mostly, we are lazy and we like it that way.

I adore breakfast, so I usually start making it right away while he gets the coffee brewing.  Our default breakfast is a poached egg over potatoes.  It is so simple and I can still be lazy while making it.  A simple dicing of a few potatoes, parboiled in salted hot water, are simply pan fried with whatever seasoning I feel like that morning.  If we have some leftover lunch meat or smokey sausages, I'll add that to the mix too. Sometimes veggies go in there - tomatoes, peppers, etc. - whatever I have on hand.  All of this is topped with a runny poached egg.  Small serving and delicious for a Sunday morning.

Many times I'll opt for tea versus coffee.  Something about tea makes me want to relax a bit more - and I always grab the glass pot for my flower jasmine tea on the weekend.  Isn't it gorgeous?

Lazy Sunday's - I bet you didn't know that I love them being the over programmed person I am.  Well, now you know. It is a bit of happiness that I get with my best friend and I look forward to it every weekend.

What are you looking forward to cooking this weekend?
